Gnocchi (pronounced nyoh-kee) means lumps in Italian, and refers to a thick, pillowy dumpling. Available fresh, frozen, or dried, the pasta is made from a dough based on potatoes, flour, farina, or semolina, which is rolled into long cylinder shapes, cut into bite-sized pieces, and sometimes decorated with forked ridges. They are boiled, baked, or sautéed, then served in a tomato, pesto, cheese, or butter-based sauce. Smaller forms are referred to as gnocchetti .

In response to my sending this article to George, he wrote back to ask me what I’ve been cooking lately. My reply: I’ve been working on this pasta dish where I make pancetta, then make a sauce from three tablespoons of butter, two tablespoons of oliver oil and one tablespoon of balsamic vinegar. Ingredients Spaghetti ¼ Packet Garlic Cloves 2 Pieces Onions 3 (Grounded) Tomatoes 4 (Grounded) Tomato Puree ½ packet Capsicum ½ (finely Chopped) Salt, pepper to taste. Oregano 1 TSP. Sugar 2 TSP. Tomato Ketchup 2 TSP. Cheese 1 Cube (Grated) White sauce ½ Cup. Method Take oil in a pan, sauté onions, then add garlic cloves, tomatoes and capsicum and cook for five minutes (on full gas). Then add tomato puree, salt, pepper, oregano, sugar, ketchup and cheese. Mix well
